Crunchy Fried Walleye
1 cup Evaporated milk
2 cups Cracker crumbs
1/8 teaspoon Salt
1/8 teaspoon Freshly-ground black pepper
1 1/2 pounds Walleye fillets -- cut serving-size
2 tablespoons Vegetable oil -- to 4 tbs
Blend egg and milk in a pie plate. Combine crumbs, salt and pepper on a sheet of wax paper. Dip fish in milk, coat with cracker crumbs. Heat oil in 9-inch skillet. Fry fish, a few pieces at a time, until golden-brown. Turn,and fry until golden-brown. Drain on paper towels.
