Cajun Spiced Fish
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon freshly-ground black pepper
1/2 teaspoon cayenne pepper
2 teaspoons paprika
3/4 teaspoon garlic salt
4 pieces cod fillet - (abt 6 oz ea)
6 tablespoons butter -- melted
Place all the herbs in a bowl and mix well, then spread them evenly on a large platter.
Dip the cod fillets in the melted butter, then press onto the herbs on the plate, turning once and pressing the herbs into the other side.
Grill the fillets over medium-high heat. The fish is done when it just begins to flake.
This recipe yields 4 servings.
