Fish Fillets "out of Oven"
8 oz Flounder fillets
1 1/2 ts Lemon juice
2 ts All-purpose flour
1/4 ts Salt
Dash each ground nutmeg, dillseed, and pepper
1 tb Margarine, divided
1 1/2 oz Canadian-style bacon, 2 equal pieces
2 tb Plain dried bread crumbs
1/2 oz Gouda cheese, coarsely shredded
1/2 oz Blanched almonds, ground
Arrange filles in shallow bowl and sprinkle with lemon juice; let stand for 15 minutes. Combine flour, salt, nutmeg, dill and pepper on a sheet of waxed paper or a paper plate. Dredge fillets in flour mixture and set aside.
Preheat broiler. In 9-inch oven-proof skillet heat 2 teaspoons margarine until bubbly and hot; add bacon and saute until lightly browned. Remove bacon with slotted spoon; set aside and keep warm. Cook fillets in same skillet over medium heat, turning once until lightly browned. Top fish with bacon, sprinkle with bread crumbs, cheese, and almonds, then dot with the remaining teaspoon of margarine. Transfer skillet to broiler and broil until cheese is melted and topping is browned, about 3 minutes.
Makes 2 servings.
