Aromatic Fish Soup
1/2 ts Chilli flakes
1 ts Cumin
2 ts Paprika
4 tb Fresh lemon juice
2 tb Fresh chopped mint
5 Cloves garlic; minced
6 lg Tomatoes; peeled and cut into eighths
1 1/2 kg Potatoes; peeled, cut into halves and then sliced
8 c Water
1 c Finely chopped parsley or coriander or both
1 1/2 kg Firm white fish fillets or seafood or cut into large mixture, pieces
4 tb Olive oil
Place the first 9 ingredients in a large saucepan and bring to the boil. Simmer for 20 minutes, covered then remove cover and simmer 10 minutes more.
Add fish/shellfish and the olive oil with salt and pepper to taste and cook for 10 minutes.
Ladle the soup into individual bowls and sprinkle extra coriander and parsley over each serve.
