Halibut and Peppers Julienne
1 Red pepper, seeded
1 Green Pepper, seeded
1/2 Yellow pepper, seeded (optional)
2 Stalks celery, halved
2 tb Butter
1 Tomato, seeded and coarsely chopped
1 ts Chopped parsley
1 ds Paprika, curry powder, and cayenne
Salt And Pepper
2/3 c White Wine
Cut peppers, onion, and celery into thin strips. Melt butter in skillet. Add prepared vegetables and all remaining ingredients, except halibut. Simmer 5 minutes. Spoon simmered vegetables and pan juices over halibut just before serving.
