"the Only Way I'll Eat Fish" Dish
1 lb. or more of fresh Haddock Fillets, skinned
1/4 cup mayo or salad dressing (may use fat & cholesterol free)
1 stack Ritz crackers (may use lo salt)
1/2 tsp. oregano
Pepper to taste
1/4 cup Parmesan cheese
2 Tbsp. melted margarine, butter or latta
1/4 tsp. garlic power
Paprika, dried parsley to garnish
Preheat oven to 350 degrees F. Butter 13"x9" glass baking dish.
Wash Fillets with cold water. Dry well with paper towel. Place in dish. Spread with mayo or salad dressing.
Crush crackers well. Add oregano, pepper and cheese. Combine garlic powder with melted margarine or butter and mix into cracker mixture.
Top Fillets with cracker mixture. Sprinkle with parsley and/or paprika and bake 25 minutes until flaky and moist.
