2 lb Eel, skinned
1 t Salt
2 Eggs, lightly beaten
1 c All-purpose flour
1/8 t Pepper
1 c Dry bread crumbs
Stir together flour, salt and pepper. Coat eel with the mixture; dip into eggs, then coat with the bread crumbs. Fry each piece for about 4 minutes or until golden brown.
