Crumb-Topped Alaska Cod

1 pound cod fillets -- thawed if necessary
Melted butter or margarine
1/4 cup fine dry bread crumbs
1 tablespoon chopped parsley
1/8 teaspoon salt
1/8 teaspoon freshly-ground black pepper
1/8 teaspoon paprika
Lemon wedges

Cut cod into serving-size pieces. Coat on all sides in about 3 tablespoon melted butter. Place in baking dish.


Combine bread crumbs, parsley, seasonings and 1 tablespoon melted butter. Sprinkle crumb mixture over cod.


Bake at 450 degrees 8 to 10 minutes or until cod flakes easily when tested with a fork. Serve with lemon wedges.


This recipe yields 4 servings. Recipe may be halved.
