Cream Cheese and Caviar Roll
1 lb Cream cheese
2 oz To 3 oz black or red caviar
Soften cream cheese to room temp. Line a cookie sheet w/waxed paper.
Spread softened cream cheese on waxed paper into a large rectangle.
Using a spatula, spread caviar over cream cheese, reserving a small
amount of caviar for garnish. Refrigerate about 10 mins, or until
cream cheese starts to firm up. Roll cream cheese like a jelly roll,
pulling waxed paper away as you shaped roll. Garnish top of roll
w/reserved caviar & refrigerate until firm. Trim ends w/knife dipped
in hot water. Serve w/crackers or bagel crisps. Makes 1 cream cheese
caviar roll, enough for about 16 to 20 servings, depending on what
other appetizers there are.
