Fish n spinach Roll Ups

10 oz. package Green Giant cut leaf spinach in butter sauce
1 lb. frozen fish Fillets (Flounder) thawed
3 eggs, beaten
1 1/2 cups herb seasoned stuffing mix (Betty Crocker)
1/2 cup grated Parmesan cheese
10 3/4 oz. can condensed cream of Shrimp soup or cream of mushroom or Clam chowder New England and strain out potato
1/2 cup sour cream
1 tsp. lemon juice
1/4 tsp. salt


Heat oven to 350 F. Cook spinach according to package directions. Divide fish Fillets into 6 to 7 thin serving pieces.


In medium bowl, combine eggs, stuffing mix, cheese and cooked spinach. Wrap each fillet around evenly divided portions of the stuffing mixture. Place, seam side down, in 12 x 8 baking dish. In small bowl, combine remaining ingredients; pour sauce over fish. Bake 40 to 45 minutes or until fish flakes easily and stuffing is firm.


Makes 4 to 6 servings.


Microwave Directions: prepare as directed and microwave 15 to 20 minutes or until fish flakes easily.
