Gremolata Baked Cod

1 Sliced bread, crust removed
1 Lemon
1 Clv Garlic, Minced
2 tb Parsley, chopped
2 tb Shallot or green onion, minced
2 ts Olive Oil
Salt And Pepper 1 1/4 lb Cod fillet, cut into 4 pieces


Preparation Time: Cooking Time: 15 min. Oven Temp: 450oF


Tear or chop bread into crumbs and put in a bowl. Preheat oven to 450F. Peel zest from lemon and mince; sqeeze juice from lemon. Add 1 tbs, lemon zest, garlic, parsley and shallots to bread crumbs and stir. Drizzle with oil and stir to thoughly combine; season with salt and pepper. Rinse fish and pat dry; arrange pieces in a single layer on a lightly oiled baking pan. Pour lemon juice over fish, then top with gremolata mixture. Bake fish until it is opaque through the center, abput 10 minutes for fish 1 inch thick. Garnish with remaining lemon zest.
