Stewed Codfish (Guisado De Bacalhau)
2 lb Salt cod soaked overnight
4 Potatoes diced
4 md Onions chopped
2 Cloves garlic chopped fine
1 lg Pimento chopped
4 tb Olive oil
Drain cod and rinse several times to remove salt. Heat oil and saute'
onions,garlic,and pepper until vegetables are soft. Add cod and
potatoes. Simmer covered for about 30 minutes or until fish is
cooked. Season with salt and pepper to taste.Garnish with sprigs of
parsley. Serve with Portuguese or Italian bread
