Mock Catfish

1 tall can Salmon
2 well beaten eggs

Remove skin and bones from Salmon. Combine with eggs. Stir mixture with corn flakes, reserving some, until stiff enough to mold in hands. Shape like Catfish; roll in fine flakes. Fry in deep fat; drain on absorbent paper.

Yield 6-8 servings
