1 lb. Flounder Fillets
Salt & pepper
1 tsp. lemon juice
1/2 cup chopped mushrooms
1 Tbsp. margarine
1/2 cup diced tomatoes
1/4 cup slivered green pepper
3 Tbsp. chopped green onions
4-6 orange sections
4-6 grapefruit sections
3 Tbsp. orange juice
Sprinkle fish with salt, pepper and lemon juice. Fold in thirds and place in a small baking dish.
In skillet, saute mushrooms in margarine until lightly browned, 4-6 minutes.
Stir in green pepper, tomato and 2 tablespoons onion, cook for 1 minute. Spoon over fish.
Add fruit sections; drizzle with juice.
Cover tightly with foil. Bake 12-15 minutes at 400 degrees F or until fish is tender.
Sprinkle with remaining onion.
