Baked Flounder Cordon Bleu
2 lbs. Flounder Fillets or 6 pieces
6 slices cooked ham
6 slices Swiss cheese
1 tsp. grated orange rind
1/4 tsp. white pepper
1 egg, beaten
1 Tbsp. margarine
1 Tbsp. flour
1 cup light cream
1/4 cup Parmesan cheese
Place 1 slice of ham and Swiss cheese in the center of each Fillet. Cut to fit. Sprinkle with grated orange rind and white pepper. Roll into pinwheels and secure with wooden picks. Gently dip roll in beaten egg and coat with bread crumbs. Place in greased baking dish.
Make sauce; combine margarine and flour in saucepan. Slowly stir in cream and heat until sauce begins to thicken. Pour over fish. Sprinkle with Parmesan. Bake at 350 F about 20 minutes or until fish flakes easily.
