Baked Stuffed Fillet of Flounder

8 slices fillet of Flounder
1 large can Shrimp, drained and chopped
2 eggs
1 Tbsp. parsley
1 tsp. salt
1/2 tsp. ground pepper
1/2 tsp. onion powder
1 Tbsp. chopped, minced onion
1/2 cup white wine
3 Tbsp. lemon concentrate
4 Tbsp. melted butter
Bread crumbs


Wash and dry Fillets, rub with lemon, sprinkle with salt and pepper.


Mix together Shrimp, egg, parsley, onion and enough bread crumbs and white wine to make a thick paste of spreading consistency. Spread each fillet with mixture, roll, and place seam down in a baking dish. Pour remaining melted butter and white wine over Fillets.


Bake at 350 F for 30 minutes, covered. Sprinkle with paprika. Serve with vegetables.
