1 lb. Flounder Fillets
1 bag frozen California mix vegetables
Garlic powder to taste
1 large onion
2-3 garlic cloves
2-3 tsp. olive oil
Parmesan cheese to taste
Sprinkle of bread crumbs
1-2 Tbsp. margarine
Saute onion and garlic in oil. Add vegetable mix. When soft, add Parmesan and bread crumbs. Drain; add shredded Mozzarella. Stuff and roll Flounder with vegetable mixture. Sprinkle with margarine and garlic powder. Bake at 350 F, 15-20 minutes or until fish flakes.
