2 lb. Flounder or Haddock Fillets
1 1/2 cups chopped tomatoes
1/2 cup chopped green pepper
1/3 cup lemon juice
1 Tbsp. salad oil
2 tsp. salt
2 tsp. minced onion
1 tsp. basil leaves
1/4 tsp. black pepper
2 to 4 drops red pepper sauce
Green pepper rings, for garnish
Heat oven to 450 F. Place Fillets in single layer in baking dish, 13 x 9 x 2 inches. Stir together remaining ingredients except green pepper rings. Spoon over Fillets.
Bake 8 to 10 minutes or until fish flakes easily with fork (Haddock is thicker so it takes a little longer). Serve with green pepper rings as a garnish.
Serves 4 to 6
