Crispy Grilled Catfish
4 Whole catfish
1/2 c Butter; melted
3/4 c Finely crushed cracker crumbs
1 ts Seasoned salt
1/2 ts Celery salt
1/2 ts Garlic salt
Rinse catfish in cold water and pat VERY DRY with paper towels. Mix
together the cracker crumbs and seasonings in shallow bowl. Dip each
fish in melted butter, then roll in seasoned crumbs. Place fish on
oiled rack four inches above hot coals. Cook 8 to 10 minutes per
side, turning once gently. Serve immediately.
