Crispy Parmesan Roughy
2/3 c Whole wheat breadcrumbs
1/4 c Grated Parmesan cheese
1/2 ts Dried oregano
1/2 ts Paprika
4 6-ounce orange roughy fillets
1/4 c Skim milk
1/4 c Tartar sauce
Prep: 10 min, Cook: 10 min.
Preheat oven to 450 degrees F. Mix first 4 ingredients in a shallow pan. Dip
fillets into milk, then coat them with crumb mixture. Place fillets
on a lightly oiled baking sheet. Bake about 8 minutes, or until
coating is browned and crispy and fish flakes easily with a fork.
Serve with tartar sauce.
