Creole Style Fish Fillets
1 lb Pollack fish fillets, thawed
1 cn (16 oz) tomatoes & juice
1 tb Lemon juice
1 tb Onion, chopped
1/3 c Green pepper, chopped
1/2 cl Garlic, minced
Season fish fillets with salt and pepper to taste. Place in an
ungreased baking dish. Mix together tomatoes & juice, lemon juice,
onion, green pepper, and garlic. Pour over fish fillets. Bake in a
400 degrees F oven. Spoon tomato mixture over fish several times during
baking. Fish is done when it flakes easily with a fork and is opaque
in the middle.
