2 Herring fillet, pickled; drained
1/2 c Sour cream
2 Eggs; hard cooked, yolk and white seperated, chopped fine
1 sm Cucumber; peeled, halved, seeded, chopped fine
1/2 c Beets, pickled; chopped fine
1/4 c Parsley; chopped fine
Arrange fillets side by side on long chilled platter. Make diagonal
cuts 1/2 inch apart through both fillets. Spread sour cream in a
circle around fillets. On border of platter, alternate mounds of
chopped egg white, egg yolk, cucumbers, beets, and parsley.
