Flounder and Spinach Bake

1 lb. Flounder Fillets
10 oz. frozen chopped spinach, thawed; well drained
1 1/2 cups seasoned croutons, coarsely crushed
1 cup shredded Swiss cheese
8 oz. corn, drained
1 beaten egg
3 Tbsp. water
Lemon pepper
1 medium tomato, cut into 12 thin wedges


Combine spinach, croutons, corn and 3/4 cup cheese. Combine egg and water. Add to spinach mixture. Mix well. Spread mixture evenly into baking dish. Cover with foil and bake at 375 F for 10 minutes.


Arrange Fillets over spinach. Sprinkle lemon pepper. Cover with foil. Bake for 15 minutes. Remove foil. Arrange tomatoes on Fillets and sprinkle with remaining cheese. Bake 5 minutes.


Serves 6.
