Flounder Au Gratin
2 tsp. margarine
2 Tbsp. flour
1 cup skim milk
1 tsp. salt
1/4 tsp. pepper
1/4 tsp. paprika, optional
1 lb. frozen Flounder Fillets, thawed
2 Tbsp. grated Parmesan cheese
In a small saucepan melt margarine over low heat. Remove from heat and stir n flour. Whisk in milk 1/2 cup at a time. Return pan to heat and cook, whisking or stirring constantly until thickened and simmering. Remove from heat, stir in salt, pepper and paprika.
Heat oven to 400 F. Arrange Fillets in baking pan. Spoon sauce evenly over Fillets and sprinkle with cheese. Bake 20 minutes until fish is white and opaque.
