6 Flounder Fillets
1 package Monterey Jack cheese
1 sleeve Ritz crackers
1/4 lb. margarine or butter
2 package creamed spinach
Dice Monterey Jack cheese. Chop or grate Ritz crackers to crumbs. Boil spinach. Strain liquid from creamed spinach.
In a casserole, spread creamed spinach. Place Fillets on top. Add cracker crumbs. Place pats of butter or margarine on top of crumbs. Spread diced cheese. Bake at 350 F for 15 minutes or until golden on top. Easy. Serve with boiled potato and salad.
