Flounder Roll Ups
4 large Flounder Fillets (Flounder may be substituted with lemon Sole)
1 (9 oz.) package frozen chopped spinach, cooked, well-drained
2 large cloves garlic, minced
1 cup feta cheese, broken into pieces
2 tsp. butter or margarine
1/4 cup chopped fresh parsley
In a bowl mix cooked spinach with garlic and juice of 1 lemon. Add the feta cheese and mix well. Take each fillet and add mixture (1/4 cup) to center of fillet. Roll and secure with toothpick. Place Fillets in oven proof casserole, add butter, sprinkle with parsley. Bake at preheated 350 F for 30 minutes.
