Flounder With Cheese Stuffing
4 small Flounder, cleaned & dressed for stuffing
1/2 cup butter or margarine
2 tsp. salt
1/2 tsp. pepper
1 cup onion, chopped
1/4 cup butter or margarine, melted
2 cups dry bread crumbs
1 cup natural Cheddar cheese, grated
2 Tbsp. parsley, chopped
2 tsp. powdered mustard
1/2 tsp. salt
Wash Flounder and brush inside and out with butter or margarine. Sprinkle with salt and pepper and place in a single layer in a well-greased baking pan. Saute onion in 1/4 cup butter until soft. Add butter and onion to remaining stuffing ingredients and mix thoroughly. Fill Flounder with stuffing. Bake at 350 F for 25-30 minutes or until fish flakes easily when tested with a fork.
