Smoked Mackerel and Banana Kedgeree
25 g Butter; (1oz)
1 ts Mild curry powder
150 g Basmati rice; cooked (5oz)
175 g Smoked mackerel fillets; skinned and flaked (6oz)
2 tb Freshly chopped parsley
4 Bananas; peeled and sliced
2 tb Lemon juice
Salt and freshly ground black pepper
Melt the butter in a large pan and fry the curry powder for 1 minute.
Stir in the remaining ingredients and cook for 2-3 minutes, stirring
NOTES : A delicious fruity kedgeree with a spicy edge.
