2 lb. skinned fish Fillets (Orange Roughy, etc.)
2 Tbsp. lemon juice
1/2 cup grated Parmesan cheese
1/4 cup butter, softened
3 Tbsp. mayonnaise
3 Tbsp. chopped chives or green onion
1/4 tsp. salt
Dash of Tabasco
Place fish, single layer, on greased broiler pan. Brush with lemon juice.
Combine Parmesan, butter, mayonnaise, green onion, salt, and Tabasco. Set this aside.
Broil fish 4-6 minutes until fish flakes with a fork.
Remove fish from broiler. Spread with cheese mixture. Broil 2-3 minutes or until lightly browned.
