Fish Leek Soup
1 tbsp. margarine
1 clove garlic, minced
1 med. onion, chopped
3 leeks, (med. size), cut in 1 inch pieces
3 ripe tomatoes, cut 1 inch pieces
2 c. chicken broth
1 c. dry white wine
1 c. water
3/4 lb. boned fish (ex. cod), cut in 1 inch chunks
Saute garlic and onion in margarine until softened. Add leeks, tomatoes, chicken broth, wine and water. Bring to a boil, then simmer 20 minutes. Add fish and bring to a boil. Then simmer just 10 minutes.
