Creamy Baked Fillet of Sole

1 1/2 lbs. Flounder or Sole
3 Tbsp. margarine
4 tsp. shallots, finely chopped
1/2 cup dry white wine
1/4 cup heavy cream
1/4 cup bread crumbs
1 Tbsp. parsley, chopped

Grease shallow baking dish with 1 tablespoon margarine and sprinkle with a few chopped shallots. Roll Fillets tightly and place in dish. Pour wine and then cream over fish; add pepper to taste, bread crumbs, parsley and remaining shallots. Melt 2 tablespoons margarine and pour over all. Bake in preheated 400 degree oven for 20-25 minutes.
