Grilled Swordfish In Lemon ginger
2 lbs. Swordfish Steaks, or any firm fleshed fish
1 Tbsp. grated lemon peel
1/3 cup lemon juice
1/4 cup dry white wine
3 Tbsp. safflower oil
2 Tbsp. light soy sauce
1/4 tsp. black pepper
1/4 cup chopped green onion
1 Tbsp. minced fresh ginger
2 cloves garlic, minced
Combine marinade ingredients, add fish, cover and let marinate at least 1 hour. Remove fish from marinade. Pour marinade into small saucepan over high heat. Bring to boil and remove from heat. Grill the fish, brushing marinade over as it cooks. Spoon remaining marinade over cooked fish.
Serves 4 to 6
