Herbed Grilled Catfish
1 tb Paprika
1 ts Salt
2 ts Dried thyme
2 ts Dried oregano
2 ts Garlic powder
1 ts Ground black pepper
1 ts Ground red pepper
8 Catfish fillets (3 pounds)
Fresh oregano and thyme sprigs
Combine first 7 ingredients; sprinkle evenly on both sides of fillets.
Place in a grill basket coated with cooking spray.
Grill fillets covered with lid, over medium-high heat (350 to 400 ) 4
minutes on each side or until fish flakes with a fork. Garnish, if
desired, and serve immediately. Yield: 8 servings.
