Mexican Fish Bake
1 c Tortilla chips -- crushed
2 c Rice -- cooked
1 c Kidney beans -- drained
1 1/2 lb Fillets -- cut into 1" Strips
1 c Salsa
1/2 c Monterey Jack cheese -- Shredded
1/2 c Onions -- chopped
3 oz Tortilla chips -- for Serving
Preheat oven at 400. Prepare a 2 quart casserole dish with cooking
spray. Using half the ingredients at a time, make alternate layers of
crushed tortilla chips, rice, beans, fish strips, salsa, cheese, and
onion. Bake for 25 to 30 minutes. Serve with tortilla chips.
