1 lb Cod or Snapper Fillets
3 tb Cajun Seasoning
1 ts Vegetable oil
2 qt Mixed salad greens
2 c Seedless grapes; Halved
Favorite Vinagrette recipe
4 sm Seedless grape clusters; For garnish
Prepare vinaigrette, set aside.
Cover entire surface of fillets with Cajun seasoning.
Pan-fry fillets in oil in non-stick skillet.
Combine greens and grapes. Toss mixture with 1/3 cup vinaigrette. Equally divide salad on four plates.
Place cooked fish on each plate of greens; drizzle with remaining vinaigrette.
