Georgia Stewed Catfish
1/2 c Butter or margarine
12 sm To medium catfish
1 3/4 c Hot water; divided
1/4 c All-purpose flour
2 c Milk
Salt and pepper
Melt butter or margarine in a roasting pan over medium heat. Salt the
catfish and arrange them so they lie flat in the pan. Add 3/4 cup hot
water, place pan in oven, and bake at 425 degrees until fish are done and
lightly browned. Remove from oven and continue cooking on top burner
of range. Add 1 cup water and bring to the boiling point. Make a
paste of flour and milk; add to water in fish pan to make gravy. Add
salt and pepper. Yield: 6 servings.
