Oven-"fried" Fish

1 Egg, beaten
1 tb Vegetable oil
1/2 ts Dried dillweed
1/2 ts Salt
1/2 ts Pepper
1 c Cornflake crumbs
2 lb Fresh or frozen cod, haddock , or whiting fillets (thawed if frozen)


Preheat the oven to 400 degrees F. In a shallow bowl, combine the egg, oil, dillweed, salt, and pepper. Place corn flake crumbs in another shallow bowl. Cut the fish into 3-inch pieces and dip in the egg mixture, then the crumbs. Place on cookie sheets th Note: For a little novelty, each time you make this try a different dried herb - like basil, cilantro, or chives - in place of the dillweed.
