1 lb. Perch Fillets
1 cup buttermilk
1 cup flour
1 cup pancake mix
1 cup beer
Put frozen Fillets in buttermilk and soak 1 hour. Drain on paper towels. Roll Fillets in dry flour. Mix pancake mix and beer to make thin batter. Dip Fillets in batter; drain and deep fry in hot oil.
