2 large Redfish Fillets, cut into 3 pieces each
1 cup butter, melted
Heat an iron skillet over high heat approximately 10 minutes (the hotter the better). Dip Fillets in butter coating both sides. Cook over high heat approximately 2 to 3 minutes on each side (depending on thickness). (This is a smokey procedures, best if done outdoors; should not be cooked indoors.) Serve with 1/2 cup melted butter.
