Red-Simmered Fish

2 1/2 lb Smelts
6 Scallion stalks
8 sl Fresh ginger root
2 c Vinegar
1 1/2 c Soy sauce
3 -(up to) 5 tb Sugar
1/2 ts Sesame oil


Have smelts cleaned; slice scallions and ginger root. Place in a pan.

Add vinegar, soy sauce, sugar and sesame oil. Bring to a boil; then simmer, covered, 2 hours.

Drain fish, discarding liquid. Refrigerate to chill. Serve cold.
