Baked Fish With Cheese Sauce
1/4 cup butter
1/4 cup flour
2 tsp. dry mustard
2 cups milk
1 tsp. salt
1/4 tsp. pepper
1 cup grated cheese (American or other)
2 lbs. Haddock Fillets
Make a sauce of butter, flour, mustard, milk, salt and pepper in the top part of a double boiler. Add the grated cheese and stir until blended. Pour over uncooked Haddock Fillets in a buttered baking dish. Bake at 350 F for 25 to 30 minutes.
