Smoked Fish and Cucumber Sandwich
4-5 thin slices cucumber, without green rind
Small portion of smoked fish (Herring, Salmon, or Whitefish)
1/8 tsp. lemon juice
1 slice rye or pumpernickel bread, lightly buttered
1 sprig fresh dill
Place flakes of fish on bread. Sprinkle with lemon juice, if desired. Use cucumber as a garnish by cutting small slits on one side of slices and twisting slices into an "s" shape. Place on top of fish. Decorate with pieces from sprig of dill.
