2 - 3 lb. fish, Flounder, Haddock, Trout
1 tsp. olive oil
1 tsp. lemon juice
1/4 tsp. dried basil
1/8 tsp. black pepper
2 plum tomatoes, cored and cut in thin slices
2 tsp. Parmesan cheese
Pat fish dry. Combine oil and lemon juice in bowl. Add fish to bowl and turn to coat. Sprinkle with basil, salt and pepper. Place tomatoes in an even layer on top of fish. Sprinkle with cheese. Cover and bake at 400 F for 10 - 15 minutes.
