Broiled Mackerel With Politiko Sauce
1/2 to 3/4 cup olive oil
2 lemons, juiced
2 Tbsp. ice water
1 onion, thinly sliced
1 cup parsley, chopped
Mackerel and lemon juice
Broil Mackerel, basting with lemon juice. When cooked, place on platter and top with sauce, using ingredients above. Beat olive oil and lemon juice until thick and creamy. Beat in ice water. Stir in onion and parsley; serve immediately.
Variation: Add a little oregano in place of or along with the parsley.
