Cheddar Fish Florentine

2 (10 oz.) packages of frozen spinach or cut broccoli
1 lb. mild White Fish (Roughy or Sole for example)
1 Tbsp. lemon juice
1 cup shredded cheddar cheese
1/4 cup dry bread crumbs
1/2 tsp. dill weed

Cover bottom of a 12 x 8 inch baking dish with spinach or broccoli. Top with fish. Sprinkle with lemon juice. Combine remaining ingredients and spoon over fish. Cover with aluminum foil and bake at 450 F for 15 to 20 minutes.7

Serves 4.
