3 lb. Grouper
Flour for dusting fish
Oil (preferably olive oil)
3 oz. almonds (toasted)
3 oz. Amaretto
4 oranges with zest
2 lemons with zest
6 oz. heavy cream, optional
Season with salt and white pepper. Dust with flour. Saute on both sides and put in hot oven and cook until firm and moist. Add all ingredients and reduce until sauce consistency.
Use orange sections, zest and fresh chopped mint for garnish. 6-7 (6-8 ounce) portions.
