2 to 4 Fillets of Orange Roughy or red Snapper
1/2 stick margarine
2 tsp. salt
2 tsp. pepper
2 tsp. garlic
2 tsp. cayenne pepper
2 tsp. paprika
Use fish rack or old cake cooling rack on grill, spray with Pam. Have grill warmed up at low setting.
Melt butter and mix all ingredients, but fish. Put fish on grill and baste, cook 5 minutes, turn fish over and baste again. Keep doing until edges are crisp and all margarine is gone. Serve with salad.
