Ginger Lime Roughy

1/4 cup soft butter
1 tsp. ground ginger
1 Tbsp. oil
1 Tbsp. diced onion
1 Tbsp. lime juice
4 Roughy Fillets
Salt and pepper to taste


Preheat oven. In small bowl, mix butter, lime juice, and ginger. Place Fillets on broiler pan that has been sprayed with Pam. Brush Fillets with oil; sprinkle with salt and pepper. Broil three minutes (Fillets should be flaking in the center). Top each with 1 tablespoon butter mixture and onion. Return to broiler for another 3 minutes.
