2 lb. Halibut
2/3 cup thinly sliced onion
1 1/2 cups sliced fresh mushrooms
1/3 cup chopped tomato
1/4 cup chopped green pepper
1/4 cup chopped parsley
3 Tbsp. chopped pimento
1/2 cup dry white wine (or chicken broth)
2 Tbsp. lemon juice
1/4 tsp. dill weed
Arrange onion slices in bottom of greased baking dish and place fish on top. Combine remaining vegetables and spread over fish. Combine wine or chicken broth, lemon juice and seasonings and pour over all. Cover and bake at 350 F for 25-30 minutes, or until fish flakes easily with a fork. Garnish with lemon wedges. 8 servings.
