Buttery Baked Fish
1/2 cup butter
2/3 cup crushed Ritz crackers
1/3 cup Parmesan cheese
1/2 tsp. each: basil, oregano and parsley
1/4 tsp. garlic powder
1 lb. Sole Fillets (or any White Fish)
Preheat oven to 350 F. In 13x9 inch pan melt butter in oven (5-7 minutes). In 9 inch pie pan, combine cracker crumbs, seasonings, Parmesan cheese. Dip fish Fillets in butter and then crumb mixture, coating well.
Arrange in baking pan. Bake 350 F for 25-30 minutes, or until fish is tender and flakes easily with a fork. Serve with lemon wedges.
